Chocolate S’mores Chia Pudding

Description

This Chocolate S’mores Chia Pudding is a fun, no-bake twist on the classic summer treat—made dairy-free, gluten-free, and vegan! Layers of rich cacao chia pudding, gooey marshmallow fluff, creamy chocolate ganache, and crunchy graham crackers, it’s a nostalgic layered dessert that’s perfect for summer!


Ingredients

Scale

1 jar vegan marshmallow fluff (affiliate link)/cream (I used this one)

1/4 cup gluten-free, vegan graham cracker crumbs (I used these graham crackers)

Chocolate Chia Pudding

1/4 cup chia seeds

1 cup unsweetened plant milk (I used oat milk)

2 tablespoon unsweetened cacao powder

2 tablespoons pure maple syrup

1/2 teaspoon pure vanilla extract

pinch of salt

Chocolate Ganache

1/2 cup dairy-free/dark chocolate chips (I used these)

1/4 cup unsweetened oat milk (or other plant-based milk)


Instructions

Chia Pudding

In a mixing bowl or jar, whisk together the chia seeds, oat milk, maple syrup, cacao powder, vanilla, and a pinch of salt. Stir well to fully incorporate the cacao powder. Let it sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 3 hours or overnight until thickened.

Chocolate Ganache

In a small saucepan or microwave-safe bowl, heat the milk until it starts to bubble. Pour the milk over the chocolate chips and whisk/stir until smooth and glossy. Let it cool before layering. The ganache will thicken as it cools.

Assemble The S’mores Cups

In small jars or glasses, layer the chia pudding, a thin layer of chocolate ganache, crushed graham cracker crumbs, and marshmallow fluff. Repeat the layers as desired, ending with chocolate ganache and then place it in the fridge to set up for about 20-30 minutes. Finally, top with a dollop of marshmallow fluff, drizzled ganache and graham cracker crumbs. You can even lightly toast the fluff with a kitchen torch for that campfire feel!

I blended the graham crackers in my food processor to create the homemade graham cracker crumbs. You can also just crush them with your hands.
