Description
These Caramel Stuffed Chocolate Dipped Pretzels make a great crunchy, sweet & salty treat to serve at parties. Gooey, buttery melted dairy-free caramel is sandwiched between two crunchy gluten-free pretzels then dipped in rich and decadent melted chocolate and garnished with superfood cacao nibs. 🥨🍫
Ingredients
60 gluten-free pretzels (I used these square pretzels)
1/2 cup dairy-free chocolate chips
1/2 teaspoon coconut oil
cacao nibs, for garnishing (I used organic cacao nibs)
Instructions
- Preheat the oven to 250 degrees Fahrenheit. Line a baking sheet with parchment paper and place the pretzels in a single layer spaced about 1/2 inch to 1 inch apart.
- Top each pretzel with an unwrapped caramel candy and bake the pretzels for 8-10 minutes. You want the caramel to be soft but not completely melted. Remove from the oven, and working relatively quickly, add another pretzel on top of the caramel and gently press down until the caramel spreads and reaches the edges. Repeat for all of the pretzels and allow them to cool. As they cool, the top pretzel should set.
- Melt the chocolate chips and coconut oil in a small bowl. You can microwave or use the double broiler method. Dip one end of each pretzel sandwich into the melted chocolate. Let the excess chocolate run off and then place it back onto the baking sheet. Sprinkle with cacao nibs and then repeat the dipping and sprinkling process for all of the other pretzels.
- Place the baking sheet into the refrigerator and allow the chocolate to set up and then enjoy! Keep them stored in an airtight container on the counter.

It helps to separate the batch into two, working with 15 pretzel bites at a time. Otherwise the caramel might cool and re-harden quicker than you can add the top pretzels and they won’t adhere.
You can use traditional pretzel twists if preferred.
