With the recent pandemic events from the Coronavirus Disease outbreak, I put together 25 recipes from the Healthy Little Vittles blog that I believe are super easy to make, healthy, boost immunity, family-friendly, and some are freezer friendly! They are gluten-free, vegan and plant-based as usual. As being quarantined has forced us all to slow down, and pushed us all to stay home and spend more time in the kitchen, I thought this list of 25-recipes would be helpful for you and your family. Included in this post are 6 breakfast recipes, 12 lunch and dinner recipes, 6 dessert recipes and a bonus pantry staple recipe, Homemade Vegan Parmesan Cheese! My hope is to provide you with some inspiration for your weekly menu in the upcoming weeks, and to motivate you to include more produce in your diet to keep those immune systems boosted, and maybe even try a new food! Aside from these normal feelings of fear, anxiety, and even anger that you might be experiencing, let us focus on things that we are grateful for. I know that I am grateful for my family, for grocery store employees so that we have fresh food available, for healthcare workers who are overwhelmed with not only how to treat those infected, but continuing to treat patients who have ongoing ailments, and I’m grateful for a God who knows our suffering and who has a plan, even though we don’t understand it. Please know that I’m thinking and praying for all of you during this really difficult, stressful time and am happy to answer any questions you may have, pray with you, and hopefully bring some positivity and light into a very seemingly dark time.
